My name is Chris Olson, Pastry Chef and Owner of Capital Cake Co.
I have been cooking and baking professionally since graduating culinary school in 2012.
With a love for the way food brings people together, I believe everyone should be able to enjoy this experience. In following that belief, alongside the premium cakes and pastries I make, I do everything I can to create alternative products that are near indistinguishable from their traditional counterparts. My goal with baking is to imbue a modern and refined food culture that is drawn from both local and international inspirations, while staying rooted in tradition.

All products are made in a Vancouver Island Health certified kitchen, and are handmade from scratch,
with top quality ingredients that are sourced locally or homegrown when possible, without the use of artificial colors or flavors, and with the highest professional standards in mind.
